Tarragon

Tarragon has a subtle and sophisticated flavor, and is an essential herb in French cuisine. Tarragon is most often used fresh, where it shines in light preparations of chicken and fish. The dried version here is good for making tarragon-infused vinegars, or mixing with chives and cream cheese to make a delectible spread. Tarragon is also one of the four herbs used to make traditional French fines herbes, along with chervil, chives, and parsley. Dried fines herbs is easily made by mixing equal amounts of the four classics.
