Ah the mysteries of tea. One plant, camellia sinensis, a hardy shrub with pretty white flowers. And from it? Black tea, green tea, white tea, oolong tea... each variety created by treating the leaves of that one plant just a little differently. Oolong tea is the Chinese version. For Oolong tea, the tea leaves are wilted in the sun, and ever-so-slightly bruised. The result? A tea sort of halfway between green and black, with it's own unique flavor profile. Technically speaking, the leaves are "partially oxidized," as opposed to unoxidized for green tea, and fully oxidized for black tea.

To Steep:
Use approximately 1 teaspoon per cup of water.
Steep for about 4 minutes.
