Carrots with Anise Seed


6 medium sized carrots, approximately 1 lb

1/4 cup butter

1 Tbsp brown sugar

1 tsp whole anise seed

1 tsp salt

fresh ground back pepper (optional, to taste)


Wash and peel carrots. Cut into sticks 3-4 inches long, or slice into rounds, whichever you find most visually appealing. 

Melt butter in a saucepan large enough to hold the carrots. Add sugar, anise seed, and salt, and heat until bubbling. Add carrots and stir to coat. Reduce heat to low, cover, and cook until carrots are tender.  Serve as a side dish with poultry or ham, or any dish that needs a delicious companion!
