Cheesy Chicken Tortilla Soup
Ingredients
2 Tbsp Olive Oil
1 – 10½ oz can Cheese Soup
2-3 Chicken Breasts
1½ cups or 1 - 15 oz can Corn
1½ cups of cooked or 1 - 15 oz can Black Beans
1½ cups or 1 – 15 oz can diced Tomatoes
½ cup or 1 – 4 oz can of finely chopped Green Chilis
½ large Onion chopped
2-3 cups chicken broth
4-6 cloves of Garlic
About ½ Tbsp Sazon Seasoning
About 2 Tbsp chopped fresh Cilantro

Preparation
1. Dice chicken and onions and finely chop garlic and cilantro.
2. Heat olive oil in a large soup pot over medium-high heat.
3. Add in chicken and onion and sauté until slightly golden brown, about 5 - 6 minutes.
4. Add in garlic and sauté 30 seconds
5. Add in chicken broth, cheese soup, corn, beans, tomatoes, and chilis
6. Season with a generous amount, approximately ½ to 1 Tbsp, of Sazon Seasoning to taste.
7. Heat over medium heat until simmering
8. Reduce heat to low, cover, and simmer for at least 5-10 minutes until chicken is cooked through.
