Smokin Huckleberry Party Cheese Ball
8 oz cream cheese, room temperature
1 cup sharp cheddar cheese, shredded
1 Tbsp finely chopped white onion
1 Tbsp finely chopped fresh parsley
1 Tbsp Inland Empire Spice Smokin Huckleberry Rub
1 cup finely chopped walnuts
1/2 cup crumbled cooked bacon, finely chopped
Combine the first five ingredients, mixing thoroughly. Shape into a ball.
Combine the walnuts and bacon. Spread on a plate. Roll cheese ball in walnut/bacon blend, pressing gently to push the coating into the cheese.
Store in refrigerator, covered in plastic, but remove 30 minutes before serving to allow some softening. Serve with your favorite thin crackers or good french bread.
