Allspice - Whole
Most of the world's Allspice is cultivated in Jamaica. Allspice comes from a New World plant, introduced to Europe in the sixteenth century by the Spaniards who landed in the West Indies. The Allspice plant is in the myrtle family and can grow to great size in tropical climates. The entire plant--bark, leaves, flowers, and eventually berries--smells wonderful. Where it's cultivated, it fills the air with an unmistakable heady perfume.
The spice Allspice comes from the berries of the plant, which are picked green and dried. The name "allspice" describes the flavor, which is best described as a combination of cinnamon, nutmeg, cloves, and a little overtone of pepper. (New cooks often mistake Allspice for a blend of the above!)
