Annatto Seed Powder

Traditionally ground annatto seeds have been used as a coloring agent, most notably to make naturally white cheeses turn orange. But annatto seed powder, also called achiote powder, is gaining popularity as a spice in its own right. It is used as the primary ingredient in achiote paste (recado rojo,) which seasons many Mexican and Puerto Rican dishes. Achiote paste is a ground mixture of annatto seeds along with aromatic herbs and whole earthy spices such as cumin, coriander, Mexican oregano, cloves, and garlic.
