Black cardamom pods are just the ripened and dried pods of green cardamom. Their flavor profile is strong and smokey, with a vaguely camphor-like overtone. They are used often in Indian cooking, and ground pods show up as an ingredient in the iconic garam masala. Often whole pods are added to dishes, and then removed after cooking.
