Mace, Ground
Mace is an interesting spice. It's actually the webby, cool-looking outside casing of the nutmeg seed. Whole, it looks like a couple of orange octopuses engaged in mortal combat. Ground, it's just a reddish-orange powder that smells like nutmeg's more floral, fruitier sister. Some describe it as more delicate than nutmeg, but that is debatable. It's worth a side-by-side taste test, the web -vs- the seed, mace -vs- nutmeg, to see which you prefer. We cook more often with nutmeg... why did we abandon mace? Look for recipes that call for mace. The recipe's author knew what they wanted and meant what they asked for.
