Vegan Gingerbread Peeps


1 cup dark brown sugar, packed

1/3 cup shortening

1 ½ cups dark molasses

2/3 cup cold water

zest of 1 small orange

7 cups all purpose flour

2 tsp baking soda

2 tsp ground ginger

1 ½ tsp ground Saigon cinnamon

1 tsp ground cloves

1 tsp salt

1/2 tsp ground nutmeg


In a large bowl, or your stand mixer, mix wet ingredients until smooth. In a separate bowl, blend all dry ingredients, sifting if you like. While mixing, slowly add dry ingredients to wet until incorporated into a firm dough. Divide into two pieces and form each into a large ball. Flatten the ball, wrap in plastic, and refrigerate for two hours.

Preheat oven to 350. Roll the dough out to ¼ inch thick on a floured board. Cut with cookie cutters into desired shapes. Place about 2 inches apart on a lightly greased cookie sheet. Bake 10-12 minutes, or until as crisp as you like. Cool and decorate!
